St. Patrick's Day Recipes

We love food and we love family. So anytime that we can combine the two we jump on it! With St. Patrick's Day right around the corner, why not celebrate with some food and fun for the whole family? We have complied some delicious recipes that we enjoy.

Shamrock Pound Cake

Serves 8

Ingredients

  1. 2 white cake box mixes
  2. 6 large eggs
  3. 2 cups water
  4. 2/3 cup vegetable oil
  5. green food coloring
  6. 2 9-inch loaf pans
  7. 2.5 inch shamrock cookie cutter

Instructions

  1. Preheat oven to 350 degrees F.
  2. Make the cake mixes (in two separate bowls) according to the box directions. Tint one of them with green food coloring, adding as much or as little until desired color is reached.
  3. Grease both loaf pans and pour the green cake batter into one of them. Bake for about 20 to 25 minutes or until a toothpick inserted in the middle, comes out clean. Remove from oven and allow to cool down completely. Cut into 1-inch thick slices and cut out the center with the shamrock cookie cutter.
  4. Pour a little bit of the untinted cake batter into the second greased loaf pan, enough to cover the bottom. Then place the shamrocks, upright, in a straight row down the middle. Pour enough batter over to cover the sides and top of the shamrocks.
  5. Bake for about 15 to 20 minutes or until a toothpick, inserted in the middle comes out clean. Remove from oven and allow to cool down completely before slicing. Cake will keep well wrapped at room temperature for up to 3 days or in the fridge for 5 days.

Slow Cooker Corned Beef

Ingredients

  1. 3 carrots, peeled
  2. 3/4 lb. red new potatoes, cut in half
  3. 12 large Brussels sprouts
  4. 1 corned beef brisket (3 lb.)
  5. 3 Tbsp. GREY POUPON Dijon Mustard
  6. 1 tsp. ground black pepper
  7. 1/2 cup plus 2 Tbsp. water, divided
  8. 2 Tbsp. cornstarch

Instructions

  1. Cut carrots lengthwise, then crosswise in half; place in slow cooker sprayed with cooking spray. Top with potatoes, Brussels sprouts and meat.
  2. Mix mustard, pepper and 1/2 cup water until blended; pour over meat. Cover with lid.
    Cook on LOW 8 to 9 hours (or on HIGH 5 to 6 hours).
  3. Use fork or slotted spoon to transfer meat and vegetables to platter; cover to keep warm. Pour liquid from slow cooker into saucepan. Bring to boil. Stir in combined cornstarch and remaining water; cook and stir 2 to 3 min. or until sauce is thickened. Spoon over meat and vegetables.
